Centennial Lager is brewed simply with pilsner malt and a touch of corn. Hopped lightly in the kettle with an awesome lot of Centennial hops, with just a slight dry hop addition. Centennial Lager was brewed for our friends at Hama Hama located on and around the beautiful Hood Canal. They are celebrating 100 years of harvesting and growing timber and shellfish in the area as a family with the help of the pristine water that flow through the Olympics, making its way down through the estuaries and into the salt water fjord that is the Canal.

New Zealand-Style Pilsner

Damn the Sky was brewed by our resident Kiwi brewer, Benji, with a simple grain bill of Pilsner and Carapils. It was hopped with @freestylehops Riwaka, Motueka, and Nelson Sauvin in the kettle, before being dry-hopped with more Nelson Sauvin. Light, clean, and hop-forward, you'll be hard pressed to have only one.

Garden Of Light was brewed with a generous portion of Oat Malt from our friends at LINC Malting, and was hopped in the kettle with Willamette then dry-hopped with Talus Cryo and Citra. Garden of Light was fermented with a farmhouse yeast originating from Lithuania, creating a light and citrusy beer perfect for the summer vibes ahead.

We brewed this beer with our buds at Here Today Brewing, a soon to be open brewery in Downtown Seattle. Miami Morning Coming Down was brewed with Pilsner and 2-Row malts, as well as maybe the most flaked corn we have put into a beer. It was hopped in the kettle with Columbus and Chinook, then dry hopped with more Chinook and Citra Cryo. Crisp, clean, and (mostly) clear, this beer is the perfect blend of old and new school ingredients and techniques.

Latona Pub 35th Anniversary India Pale Ale

In celebration of the Latona Pub's 35th anniversary, Test of Time was brewed with Pilsner, Two-row and Chit malt, along with flaked oats for body and mouthfeel. Hopped in the kettle with Comet and Chinook, fermented with English ale yeast, and dry-hopped with Citra Cryo and Galaxy. This IPA is a combination of old and new styles and ingredients providing a nod to the past, while brewing in the present.

The Death Of All Things

New Zealand IPA

The Death Of All Things was brewed in collaboration with our friends in New Zealand at Freestyle Hops. We were lucky enough to get to work with a new hop variety they are working on named Codename Peacherine. This, along with the finest lot of Southern Cross we have ever seen, make this beer a big stonefruit bomb. Using Pilsner, 2-Row, malted oats and flaked barley to let the hops shine, we then fermented it with the finest English Ale yeast.

The Sentience of Animals

IPA

The Sentience of Animals was brewed with Golden Promise and Pilsner malts, along with some flaked barley and malted oats. We used a couple fun new ingredients for this beer, as well. The first was a whirlpool addition of an experimental new hop product from Yakima called YCH-303 (Citra, Simcoe, Mosaic, and Phantasm blended together in cryo form). That was followed by fermentation with a brand new yeast called Capri, then dry-hopped with Nelson, Motueka, and Mosaic Cryo.

Collab Pale Ale w/E9 Brewing

Tiny Swords is a collaboration Pale Ale done with E9 Brewing in Tacoma, and includes a massive dry hopping of Columbus, Strata, Enigma and Idaho 7. Loads of tropical and stone fruit aromatics from the dry hopping combined with bright citrus and tropical notes from the hybrid yeast 'Capri' derived from a Kveik strain and the ever popular Imperial Juice strain.

We brewed this beer using almost 60% wheat both in flaked and malted forms, we used a classic english strain to ferment this beer before it was transferred onto a ton of passionfruit and peach. Super light and refreshing with a huge fruit kick, brewed for dreams of beach days and tiny umbrellas in your glass.
